I adore the beautiful and flavourful combination of apples and cinnamon. They are united in this classic pound cake and has got the company of white chocolate, that is caramelized while baking. YUM!
Serve the cake warm with a full fat sour cream on the side.
Apple cinnamon cake with white chocolate
250 g butter, softened
250 g sugar
250 g plain flour
1 tsp baking powder
3 apples, cut in thin slices
30 g sugar
3 tsp cinnamon powder
60 g white chocolate, Ivoire 35% from Valrhona
Preheat the oven for 180 degrees celsius. In a bowl whisk together butter and sugar and then add the eggs one at a time. Finally fold in flour and baking powder. Line a round cake tin (22 cm) with parchment paper. Pour half of the cake batter into the tin. Mix the apple slices with sugar and cinnamon and put 2/3 of the apple filling on to the batter. Add the rest of the cake batter on top. Finally put the rest of the apple filling on top and sprinkle with chopped white chocolate. Bake for about 50 minutes and check for doneness with a tooth pick.
