I made this delicious mango kulfi ice cream when my parents lived in Chennai, India.
Indian mango kulfi with cardamom and dried figs
80 ml heavy cream
200 g condensed milk (1/2 tin)
100 ml mango, pureed
1/3 tsp cardamom
75 g dried figs, finely chopped
Pistachios for servings
Whip the cream until soft peaks form. Gently fold the whipped cream together with the condensed milk and the mango puré to combine well. Add the cardamom and figs. Freeze the kulfi in bowl and give a stir while freezing.
