Super, simple and really refreshing & rich ice cream with beautiful vanilla-dots and a creamy taste.
Skyr ice cream
1 dl heavy cream
80 g sugar
1/2 vanilla pod, the seeds emptied from the pod
400 g skyr (icelandic yogurt)
Bring the cream to the boil with the sugar, vanilla pod and seeds. Remove from the heat, take away the vanilla pod and add the skyr. Whisk to combine. Cool down the cream and churn in the ice cream machine. Serve straight away!
