Brazilian brigadeiros. Melting in your mouth with a silky smooth center – and the perfect crunch of cacao nibs. I got the recipe from the organic AMMA Chocolate when I visited their chocolate production in Bahia in June 2013.
Brigadeiros
30 servings
1 tin of condensed milk (350 g)
1 bar AMMA 100% AMMA 100% (80 g)
75 g AMMA cacaonibs, shortly blended
Pour the condensed milk in a sauce pan and add the chopped chocolate. Heat the mixture at medium heat while stirring for about 10-12 minutes until the bottom of the sauce pan shows when stirring in the mixture. Pour the chocolate mixture in a buttered container/lined with parchment paper. Cool down and let it rest in the refrigerator for an hour. Form balls and roll them in cacao nibs. Store them in the refrigerator in an airtight container.
