Chocolate cake and poached plums are a match made in heaven. Serve this divine cake with whipped cream or vanilla ice cream.
Chocolate cake with poached plums
2 dl water (200 ml)
100 g sugar
Chocolate cake batter
200 g dark chocolate, chopped
200 g butter
250 g sugar
5 eggs, lightly beaten together
1 tbsp flour
Cut the plums in two pieces and remove the stones. In a saucepan bring sugar and water to boiling point and let simmer until the sugar has dissolved. Add the plums to the sugar syrup and let them poached (simmer) for about 8 minutter. Let them cool down in the sugar syrup.
Chocolate cake batter:
Melt the butter in a saucepan and add the chocolate straight away. Stir until the chocolate has melted completely. Remove from the heat and stir in the sugar. Cool slightly down and then add the eggs gradually. Finally fold in flour. Pour the chocolate cake batter into a square cake tin (22 cm x 22 cm) lined with baking paper. Put the plums onto some paper towel to absorb of the acces liquid and place the plums in the chocolate cake batter. Bake the cake in the oven at 180 degrees Celsius for about 25 minutes. Cool down and store in the refrigerator until serving. Bake at least 6 hours in advance and preferably the day before.
