Apricot balls
20 balls
50 g almonds
50 g toasted hazelnuts
50 g dried apricots
50 g raisins
2 tbsp cocoa powder, preferably from Valrhona
1 small orange, the juice of
1/2 tsp cinnamon
1/5 tsp sea salt
15 g shredded coconut
For rolling:
Cocoa powder and shredded coconut.
In a food processor process the almonds and hazelnuts until crumbly. Then add the apricots, raisins, cocoa powder, orange juice, cinnamon, salt and coconut and process again until you get a sticky batter. Roll spoonsfulls of the batter between your hands to form bite-sized balls. Roll them in cocoa powder and coconut. Store in the refrigerator until serving.
