My parents lived in India for four years and I visited them quite a few times and was also introduced to this Indian dessert, Halwa. I prefer the halwa served cold with vanilla ice cream on the side.
Halwa
200 g carrots, grated
1 liter whole milk
200 g sugar
1 tsp powdered cardemom
a handful of raisins
a handful of raisins (choose your favorite nuts)
In a thick sauce pan bring milk to a boil and add the grated carrots. Stir the mixture while simmering away until it has a thick consistency and no traces of milk left. This can take about an hour at medium heat. Remove the sauce pan from the heat and add the sugar, cardamom, raisins and nuts.
