Crispy cookies with a soft center and lots af almondy marzipan flavour. Enjoy them as they are or decorate them with milk chocolate.
Marzipan cookies with milk chocolate
65 g butter, softened
50 g sugar
40 g oatmeal
35 g plain flour
70 g marzipan, grated
60 g milk chocolate, preferably Jivara 40% from Valrhona
Chopped almonds, pistachios, cacao nibs, freezedried berries and rose petals for decorating
Mix all the ingredients together in a bowl and form 9 balls. Place them on a baking tray lined with parchment paper and make sure to make room for spreading while baking. Use your finger tips to flatten the cookie balls a bit. Bake in the oven at 180 degrees Celsius for 10-15 minute until nicely golden. They get crispy when they cool down.
Melt the milk chocolate and decorate the cookies with it and the other toppings listed above.
