This is without a doubt the best carrot cake in the world. Period! It is so easy-peasy to make and tastes divine! Pure bliss. I got the recipe for the cake from my old boss and chef Carsten Duvander, and I am so honored to be able to share with you!
The best carrot cake in the world

Carrot cake:
3 eggs
1,5 dl sunflower oil
450 g brown sugar
210 g plain flour
300 g carrots, grated
1,5 tsp baking powder
2 tsp powdered cinnamon
2 tsp powdered cloves
1/2 tsp salt
100 g walnuts (optional)
2 dl raisins (optional)
Cream cheese frosting:
200 g cream cheese
60 g powdered sugar
1/2 vanilla pod, the seeds
1/2 organic lemon, the zest
3 tsp of lemon juice
Carrot cake:
In a bowl mix together all the ingredients. Pour the batter into a round cake tin (22 cm) lined with parchment paper. Put the cake into the oven and then turn on the oven at 180 degress celsius and bake for about 70 minutes. Check with a toothpick if the cake is done. Cool down.
Cream cheese topping:
Mix together all the ingredients for the topping. Spread on top of the carrot cake.
