These cranberry crumble bars are so extremely delicious and my husband’s new favorite cake. Try them, bake them, eat them <3
Cranberry crumble bars
16 bars
Cranberry jam:
220 g fresh cranberries
1/2 vanilla pod
50 ml water
80 g sugar
Dough:
200 g plain flour
130 g brown sugar
100 g oatmeal
185 g butter
1/4 tsp salt
Cranberry jam:
Put the cranberries into a small saucepan. Scrape out seeds from the vanilla pod and add both seeds and pod to the cranberries together with water and sugar. Bring to boiling point and let simmer for 7-8 minutes with the lid off until the cranberry jam thickens. Remove from the heat and let cool down.
Dough:
Put all the ingredients into a kitchen machine and mix together to a crumbly dough. All feel free to use your hands to mix in a regular bowl.
Press half of the dough into the bottom of square baking pan (22 cm x 22 cm) lined with baking paper. Remove the vanilla pot from cranberry jam and spread out the jam on the dough. Crumble the rest of the dough on the jam and bake in the oven at 200 degrees Celsius for about 20 minutes, until the crumble is nicely golden. Cool down for 30 minutes and cut out the cranberry bars.
